We have taken our 70/30 dark/light meat ground to a fine chop, mixed in dried porcini mushrooms and a hard Swiss cheese, which makes for a super special craft bratwurst, that can be a stand alone dish, or will compliment a white pasta sauce and noodle dish. You wont find many farms that raise the meat from a day old chick and process it to a finished sausage.
